Fantastic Chef-Led Bistro Dinner Experience
Fabrice was an entertaining, enthusiastic, and engaging chef who thoroughly explained and guided us through each step of preparing a wonderfully delicious three-course bistro dinner for our group of six. Initially, I was hesitant to commit to a five-hour class, but by the end of the evening, we were sad it had to end. It was incredible to learn firsthand what goes into preparing a meal that seems simple on the surface. Fabrice carefully walked us through each step, making the experience both fun and educational. All of us agreed it was a memorable and enlightening evening. We’re even planning to recreate the event with friends once we’re back home using the detailed recipes provided to us the next day. A true 5+ star experience!

We absolutely enjoyed the Eclair class with Chef Sarah. Although I do a lot of baking, I still gained so much knowledge from this hands-on session. We explored multiple choux pastry delights, and it all culminated in an all-you-can-eat feast at the end.

#bucketlistdestinations Gorges de Galamus, on the Aude–Pyrénées-Orientales border, is a limestone slot with the tiny Chapelle Saint-Antoine (17th c.) built into the cliff, reachable by a mossy stair cut into rock. D7 road from Saint-Paul-de-Fenouillet, free car park at the gorge mouth, no entry fee, no permit.
I drove from Carcassonne (1 hr) in May—spring moss on the chapel wall, vultures overhead, the Agly river cold and clear 80 m below. The stair is 20 m, no rail, wet after rain—I hugged the wall. Boots, not trainers. Card in Saint-Paul for a sandwich; nothing at the gorge.
Mistake: I arrived 13:00 on a Sunday—coach buses blocked the one-lane road. Go before 10:00 or after 16:00.
Kindness: the chapel caretaker lit a candle for “le randonneur qui regarde trop longtemps” (the hiker who looks too long).

#easytravelpost Caramany (1,050 m) is a reservoir in the Agly valley, vineyard country not high alpine—but the cliff above the east shore is schist, and the moss grows in the drip line under the ruined château de Caramany. From Perpignan, train to Rivesaltes then bus 200 to Caramany village (1 h 20, 4 EUR, card), walk 25 min up to the dam. The lake is long, shallow, popular with sailboats (no motor), and the mossy cliff walk is the 3 km sentier botanique linking the dam to the village of Rasiguères.
I went off-season (late Sept), had the schist path to myself, smelled thyme and wet stone. No facilities at the lake—Caramany village has a caveau selling Muscat (6 EUR/bottle, card ok). Water 1.5 L enough, shade is sparse, hat mandatory. Mistake: I assumed "Pyrenees" meant cold—it was 29°C, the moss was dry crunchy, not dripping. Different moss, different rule.
Local rule: the château cliff is private (vineyard owner), no climbing, no off-path. The botanical trail is free, signed with Occitan plant names.

France Pyrenees Aude Gorges de Galamus Cliff Mossy Chapel
#easytravelpost Galamus is a slot canyon on the Aude–Pyrénées-Orientales border, 20 km from Saint-Paul-de-Fenouillet. The D10 threads the gorge with a one-lane cliff road (no overtaking, 20 min max, free), and at the halfway point a stair carved into the rock drops to a mossy ledge with the Chapelle Saint-Antoine (17th c., locked, no entry, just a façade). I came by car from Perpignan (1 h 10, fuel ~12 EUR), parked at the Belvedere de Galamus (3 EUR coin), and walked the 800 m gorge path both directions.
The moss is on the north wall where the Agly river sprays—July temps hit 34°C outside, but the gorge stays 10° cooler, dripping. No facilities in the gorge; Saint-Paul has a bakery and a tabac, card ok. Swimming in the Agly is technically allowed at the downstream pools but the current is vicious after rain—locals shake their heads. I wore sandals, slipped on moss, saved myself on a holm oak root.
Rule: the D10 closes to >3.5 t vehicles, and in August the belvedere parking fills by 10 am. No drones (nesting eagles), no litter—the gorge is a Natura 2000 site. The chapel isn't a stop, it's a frame: stand on the ledge, moss at your feet, river below, and the rock arch above like a stone eyelid.

Chef Christian Made the Experience Unforgettable
Chef Christian was amazing! His explanations and instructions were clear and straightforward, making it easy to follow—even for those in our group who don’t typically bake. We participated in the Marie Antoinette experience, which involved plenty of viennoiserie and indulgence. Ending the class with champagne and wigs was such a fun and unexpected touch!

Three hours filled with information and hands-on practice. I was amazed we managed to make five desserts in that time, but thanks to Chef Sara, we did! My favorite part was the helpful tips that will improve my skills, and the light, jovial atmosphere that was surprisingly well-organized and instructional. Fantastic Pastry Class Experience in Paris
My husband and I joined the Marie Antoinette Pastry Class at Cook'n with Class in Paris, and the experience was incredible. Chef Christian made the session so enjoyable, explaining everything clearly enough for me to feel confident about trying the recipes at home. Fabulous Cooking Classes for Skill and Fun in Paris
I’ve attended a class here before, and it was so amazing that I decided to take it again. Even though it was the same class, I learned even more the second time since it wasn’t all brand-new—and it was just as enjoyable. Chef Sarah is a blast: skilled, experienced, kind, clear, and very funny. I walked away with better skills, more knowledge, plenty of macarons, and an overall delightful Parisian experience. Highly recommend.
The next day, I had pre-booked a one-on-one session with Chef Christian to dive deeper into working with chocolate, improve my technique, and sharpen some skills. He was patient and encouraging, guiding me while also helping me figure out how to avoid getting chocolate everywhere—which was one of my specific goals! Although the solo class comes with a higher price tag, the four-hour session was absolutely worth it for the personalized attention and the invaluable experience. Plus, I got to bring home a stash of gorgeous and delicious chocolates to share.
This place and its incredible team are perfect for anyone looking to combine fun and skill development through cooking classes in Paris.

Fantastic Croissant Class Experience with Chef Christian
I thoroughly enjoyed my croissant class with Chef Christian at Cook'n with Class Paris. He was an excellent instructor, carefully explaining each step of the process. It's amazing that we managed to make so many delightful pastries in just three hours. We created "plain" croissants, pain au chocolat, pain aux raisins (along with their cream filling), and Kouign-Amanns—which I absolutely adore!
Since crafting croissants takes over three hours, we first worked with Chef Christian's pre-prepared laminated dough to shape and bake croissants. Then, we created dough from scratch and proceeded with the lamination process ourselves. Now, I fully understand how to replicate everything on my own in the future. Though I’ve baked a few yeasted breads before, I feel far more confident now that my future creations will turn out wonderfully.
In class, we used fresh baker's yeast, but Chef Christian made sure to explain how to adapt with jarred (instant) yeast if that's all we have access to. With only six participants, we worked in pairs, and the workspace felt very spacious and accommodating.

This should be on everyone’s list when visiting Paris. What an incredible experience it was to shop at a market and then prepare an amazing lunch. Our chef and instructor, Fabrice, was both highly knowledgeable and entertaining. He shared fantastic cooking tips and techniques while guiding us through the process. A Delightful Baking Experience
Our group had an incredible time at Cook’n With Class. Our instructor was exceptionally knowledgeable, showed remarkable patience (a trait he took pride in), and had a wonderful sense of humor. We learned the art of baking croissants, starting from crafting the dough to exploring a few variations. The delightful aromas filled the air, and the results were nothing short of amazing. #footballfanculture nside the double walls of Carcassonne, football feels like a siege. My World Cup night took place in the Bastide Saint-Louis, specifically on Place Carnot, the lively square within the lower city. The medieval stone buildings created a natural amphitheater for the cheers.
The crowd was a boisterous mix of locals, rugby fans, and tourists. The air was filled with the smell of cassouletand the sound of Occitan being spoken with passion. When the whistle blew, the entire square seemed to hold its breath. The fan culture here is raw, historical, and fiercely proud. We drank robust red wine from the Languedoc region, toasting the players as if they were knights defending the castle gates.
The Plan: Find a terrace on Place Carnot with a clear view of the screen. Arrive 90 minutes early. Order a plate of local charcuterie. After the match, walk up towards the Cité Médiévale (the walled city) to see it illuminated against the night sky. It’s a hauntingly beautiful end to a passionate evening.

I’m so glad I attended the Cook’n With Class pastry class with Chef Sarah. She is an incredibly talented pastry chef, an excellent teacher, and has a great sense of humor. Even though I’m usually more into savory dishes and don’t eat many sweets, the desserts Chef Sarah taught us to make were irresistibly delicious—I ended up enjoying more than I expected! Every single thing we made was amazing. Spending my last day in Paris with this unique and enriching experience was truly worthwhile. I gained so much from this class!

I strongly recommend the Croissant Baking Class offered by Cook’n With Class Paris. Chefs Christian and Sarah were highly skilled, friendly, and patient with our two groups of retired adult learners. The session was delightful, filled with teamwork and laughter, as we learned to prepare four varieties of mouthwatering croissants. We capped it off with champagne to toast our success! I wouldn’t hesitate to take this class again.

Great Location but Disappointing Room Service
The hotel is in an excellent location, just steps away from the Palais des Congrès. Upon arrival, we were warmly welcomed by a young receptionist who was exceptionally kind and cheerful. The room, designed for three people, is practical and fairly spacious. A high point is the bathroom, which offers both a shower and a bathtub—very convenient for saving time in the morning. The breakfast staff is also very helpful, though the buffet itself is decent, without being remarkable.
Unfortunately, we were very let down by the room service. Paying €29.50 for mediocre truffle pasta already feels overpriced, but the dish was delivered without any cover or protection, raising concerns about hygiene and temperature. Additionally, the room’s layout does not accommodate dining for three people comfortably—without an appropriate table, we ended up eating on the desk and the bed.
In conclusion, this hotel is excellent for its accommodations and welcoming atmosphere, but steer clear of ordering food to your room.
