But beyond the postcard version lies a country of extraordinary scale, contrasts and complexity. Here are a few myths worth leaving behind. 01 — MYTH: China is one huge, densely populated city. FACT: China is vast — and remarkably diverse. Beyond its megacities are snow-capped mountains, remote valleys, deserts, rice terraces, forests, grasslands and thousands of rural communities. From the Himalayas in the west to the subtropical landscapes of the south, the scenery changes dramatically across the country. 02 — MYTH: Everyone in China speaks Mandarin. FACT: Mandarin is the country’s official language, but China is home to a remarkable linguistic landscape. Cantonese, Shanghainese (Wu), Hokkien and many other regional varieties and languages are spoken across different communities. Language, like landscape, changes from place to place. 03 — MYTH: Chinese cuisine is basically the same everywhere. FACT: There is no single “Chinese cuisine.” Sichuan cuisine is known for its bold heat and numbing spice. Cantonese cuisine often celebrates delicate flavours and fresh ingredients. Yunnan offers influences and ingredients unlike those found elsewhere in the country. Travel across China and the dining experience can feel like entering an entirely different culinary world. 04 — MYTH: The Great Wall is one continuous wall. FACT: The Great Wall is actually a vast network of walls, fortifications and defensive structures constructed and rebuilt across different periods of Chinese history. Some sections are spectacularly preserved. Others have been reclaimed by the landscape. 05 — MYTH: China can be understood from its biggest cities alone. FACT: Shanghai, Beijing and Shenzhen reveal only one side of the country.
