Zhiteng | Top Omakase Experience in Futian, Shenzhen! An Exquisite Collision of Japanese-French Teppanyaki and Japanese Sashimi.

Last Sunday, I took a long-overdue trip to Shenzhen. It turns out that under the Zhiting Group,
there is a restaurant located in One Avenue, Futian District called Zhiteng, focusing on exquisite Omakase sushi,
sashimi, and Japanese-French fusion teppanyaki. For my first visit, I chose the Tasting Menu so I could try sushi, sashimi, teppanyaki, and fried foods all at once.
The restaurant's decor is full of traditional Japanese Zen aesthetics.
This time we were seated in a tatami private room. The environment is spacious and quiet,
providing an immersive experience that makes the whole dining atmosphere feel like you've instantly been transported to Japan.
Appetizer
🍅 Green Mussel and Sweet Tomato 🌟🌟🌟🌟
Green tomatoes paired with soft cheese, drizzled with pesto sauce. It bursts with juice in your mouth, intertwining sweet and sour fruitiness with rich dairy flavors. I didn't expect this combination to be so tasty and appetizing.
🌽 Corn and Sea Urchin Mousse
The corn mousse at the bottom is delicate and smooth, paired with vinegared mozuku, perilla flower,
and bonito broth jelly. It cleverly highlights the plumpness and sweetness of the sea urchin.
The taste leans on the lighter side but the layers are exquisite.
Sashimi
🐟 Seasonal Sashimi "Lo Hei" (Tossed Sashimi)
Grafting the traditional Cantonese "Lo Hei" technique onto Japanese sashimi — strictly selected, plump, in-season
deep-sea striped jack, paired with eight ingredients including shredded perilla leaves, carrots, white radish, and red ginger, then mixed with a special sesame sauce.
Eating the fresh, sweet sashimi together with the crisp ingredients makes for a very rich texture.
🐟 Flame-Seared Medium-Rare Mackerel
The surface of the mackerel is slightly seared over a low flame, forcing out a deep, aromatic fat.
The meat inside remains medium-rare and tender, offering a rich and fulfilling bite.
Warm Dish
🦐 Sakura Shrimp Siu Mai
The thin, crispy wrapper enfolds sweet, refreshing shrimp meat, generously stuffed to the brim. Garnished with dried sakura shrimp,
it adds a double savory umami flavor. You can dip it in chili oil for an even more appetizing and flavorful boost.
Grilled Dish
🦆 Grilled Duck Breast
Grilled duck breast paired with red wine sauce and asparagus — the skin is roasted to a golden brown and slightly crisp, locking in the juices.
The meat is tender and chewy, accompanied by a mellow fat aroma and a hint of roasted char, with no gamey smell.
Fried Dish
🥩 Pan-Fried Beef Shank and Brisket Fat 🌟🌟🌟🌟
Full of a "Sino-Japanese fusion" vibe. The concept is like a Japanese version of crispy fried chicken,
but replaced with rich beef shank meat and fatty, flavorful beef brisket fat, paired with chili and
broccoli. Although it tastes a bit oily, it's not overly greasy. It gets more fragrant as you chew, highly appetizing.
🍤 Seasonal Fresh Crab Leg Tempura Platter
The tempura batter is thin and crispy, using in-season crab legs with plump and tender meat. The platter also includes quail eggs, ginkgo nuts, crab legs, and large prawns wrapped in sakura shrimp. One bite and it's crispy outside and soft inside,
retaining the original flavors of the seafood.
Main Course
🍣 Dragon Ball Assorted Seafood Futomaki
The ingredients are solid and abundant, using perilla leaves, cucumber, and vinegared rice to wrap a variety of fresh sashimi. The top layer is crowned with a slow-cooked egg yolk; the smooth and creamy egg yolk coats the entire Futomaki,
making it extremely satisfying.
Dessert
🍮 Homemade Pudding
That day's offering was matcha pudding. The texture is smooth and tender, with rich egg and milk aromas
accompanied by a slightly bitter matcha fragrance. It's sweet but not cloying.
