Locals here don't really care about the smell when they eat snail rice noodles. This place has a flavorful broth, and they give a generous amount of pickled bamboo shoots and dried tofu skin; a bowl is quite filling. The owner is from Liuzhou and is very honest.
The broth is made from snails; you can taste it in just one sip. It's rich enough, but the umami flavor is somewhat masked by the saltiness. I recommend drinking the broth first and not adding chili oil right away, otherwise you'll lose the layers of flavor.
Open kitchens are great! Watching the chefs working inside makes the food taste even better. Don't you also like seeing open kitchens?
