Also known as tossed noodles, pulled noodles, and stretched noodles, it is a traditional noodle dish with unique local flavor in urban and rural areas of China. It is said that it is famous for its stretched noodles in Fushan, Shandong, and there is a saying that it originated from Fushan Ramen. Later, it evolved into famous delicacies with various flavors, such as Shanxi Ramen, Henan Ramen, Lanzhou Beef Noodles, Longxu Noodles, Linxian Small Ramen, etc.
I went there early for dinner and didn't have to queue. I had a big bowl of miso ramen with barbecued pork. The noodles were perfectly elastic and the soup was sweet. I mixed the ginger paste carefully in the bowl and it warmed my whole body. The aroma of the soup was even better. Caimo is indeed the pinnacle of ramen. The portion was too big, so I couldn't even order rice with soup [sad] A perfect meal!
A famous ramen shop in Sapporo. There are two kinds of ramen, one is spicy and the other is not spicy. I think the non-spicy one tastes better. The big fatty meat is the specialty meat of this noodle shop.
