I love Edinburgh, but sometimes you just need to swap the grey drizzle for a bit of southern sun and some proper mountain air. On my last break from the espresso machine, I decided to bypass the busier spots and head out into the Bulgarian countryside instead. It’s a corner of Europe that still feels wonderfully slow and untouched if you know where to look.

My absolute favourite stop was Melnik. It’s Bulgaria’s smallest town, tucked away in a valley surrounded by these bizarre, crumbly sandstone cliffs that look like miniature pyramids. I spent a lovely, lazy afternoon wandering the cobblestones and ended up sitting under a heavy, leafy grape trellis with a glass of the local rich red wine. There was an old shopkeeper quietly polishing jars of honey across the lane, and a sleepy ginger cat snoozing on a stone step. It’s the kind of place where you instantly forget what day of the week it is.

Further into the Rhodope mountains, I found Shiroka Laka. Now, living in Scotland, I’m certainly no stranger to the bagpipes, but hearing the haunting, deep drone of a Bulgarian 'gaida' echoing between the old stone houses was something else entirely. The village feels genuinely lived-in—woodsmoke drifting from slate-roofed chimneys and wooden balconies overflowing with geraniums. I stopped at a tiny, low-ceilinged tavern and tried 'patatnik', a traditional grated potato and mint pancake. It was beautifully crisp on the outside, comforting, and tasted exactly like the mountain air smells.

Before heading back, I made a detour to the Belogradchik Fortress in the northwest. It’s quite spectacular—ancient Roman and Ottoman walls literally wedged into towering, rust-coloured rock formations that look like giant statues. Climbing up the old stone steps just as the afternoon light turned to a warm amber was incredibly peaceful. 

Bulgaria has this quiet, understated magic. You don't need a packed itinerary; you just need to find a quiet corner, order a local dish, and watch the world go by.
