北海道之行唯一的一家米其林餐厅，怎么也要来个高星级的，这不花小路，新晋的米其林三星餐厅，被我提前一个月订到了。多亏了在日本的好朋友，这家店并不算难定，因为相对较冷门。札幌市区，还是蛮好找到的。预约了当晚六点用餐，准时到达；庆幸的是他家是允许一人用餐的，因为日本很多餐厅都是拒绝单人用餐之前有过经历，所以特别开心！非常温馨和谐的家庭料理店，地段也不是特别黄金，藏在一栋不算高的大楼的三楼，有本馆和别馆两家千万别走错了。迎客的应该是这家的夫人，气质很好，英文也流利。进门之后脱掉厚重的外套便被带到了吧台区域，厨师团队正在准备当晚的食材，包间里已经有客人在用餐了。角落里非常醒目的米其林三星标牌，看得出店家还是挺骄傲的。想多拍一些环境照被大厨给制止了，下面还有几个小一辈的帮厨，确实是一大家子齐上阵啊！第一道开胃菜就很好吃，山药泥搭配超新鲜的大鲑鱼子，下方啫喱状的物质不仅味道好而且为整道菜的颜值加分不少。接下来的每一道菜都是满满的惊喜。北海道产的玉米做成了天妇罗，手法纯熟，酥香可口；一道海胆茄子大概是全场最佳吧，茄子处理得很清爽，上方的北海道海胆鲜甜至极，很巧妙的搭配。北海道的毛蟹也很有名，把蟹肉整个挑出来做成一道冷菜，考验的也是食材新鲜度。一份热气腾腾的白味噌煮牡蛎，调味比较重但是正好衬托出了牡蛎的鲜美，堪称完美~两贯手握选用了金枪鱼中腹和北海道特产乌贼，手法也不输给专业的寿司店。主菜和牛豆腐应该是寿喜烧的做法，搭配了时蔬味道讨喜。主食部分选择了米饭和荞麦面双拼的组合，米饭是热热的毛蟹饭，鲜得掉眉毛；荞麦面就显得一般了。收尾的甜品环节，掏空的富士苹果里是新鲜制作的苹果雪泥，很有新意。最后买单连同税费和服务费才13000多日元，在三星餐厅里算是相当难得了。北海道之行最难忘的一次体验，下次应该还会再来，只要能订得上位！
