My husband and I were in Seville a few weeks ago and down the street from our hotel was this lovely restaurant. We had a peeled seafood paella (twice) and breakfast once (they do a full English breakfast reasonably early in the morning). The restaurant is intimate and decorated in a pared down trendy style. There is outdoor dining available, and it's inches away from Seville's beautiful cathedral. We ate indoors and it was very cool and calming after a hot, hot day in the town. The wait staff (Carlos and Ramon on the nights we were there) are charming and good fun. So everything was perfect... and then there was the food, OH MY! It was the best Paella we've ever had! Simple and so tasty. Always a good thing when there is a 1/2 hour wait for the paella, it means it's made while you wait. Oh yeah, lovely wine as well, and then a spectacular Strawberry and balsamic concoction, can't quite remember all the ingredients or what it was called but boy was it delicious. We are just making a Paella as I am typing this review, here's hoping it comes anywhere close to the one at GUSTO!
