For those of us who aren't fans of extreme heat, knowing that cities like Quito or Cuenca have an average temperature of 20°C (68°F) year-round is a huge relief. It’s like an endless spring that invites you to take slow, unhurried walks. I imagine myself spending a couple of days in Quito, getting lost in the streets of its historic downtown and heading up to El Panecillo just to see the city from above, with no rush. And then Cuenca, which they say has gorgeous, colorful colonial architecture; I’m sure I’d come back from there with some great decor and plant ideas for my balcony. Since I really love cooking, the first thing I look into about a destination is its food. I was super curious about their ceviche over there, which is different from the one we make in Mexico because they serve it with toasted corn (chulpi) or plantain chips (chifles). I’m already brainstorming how to recreate that combo in my own kitchen. The best part is that for us Mexicans, it's a fairly simple trip to plan: we don't need a visa (they give us up to 90 days) and there's just a quick registration to fill out before traveling. You only have to keep Quito’s altitude in mind so you can take it easy for the first few days. Sometimes, breaking out of your routine doesn't have to mean a chaotic trip packed with extreme activities. Sometimes, it’s simply about reading a book in a different park, breathing in fresh air at 20°C (68°F), and enjoying the silence.

Cotopaxi Volcano, a famous tourist attraction in Ecuador, has an altitude of 5897 meters and is covered in snow all year round at its peak, attracting many climbers. Due to its massive size and proximity to densely populated towns, it is considered the most dangerous active volcano in Ecuador. Cotopaxi volcano had its last complete eruption from August 2015 to January 2016, lasting for five months. In October 2022, the volcano's activity significantly increased, and the Ecuadorian government declared it on "yellow alert." In December of the same year, the Ecuadorian Geophysical Institute detected that Cotopaxi volcano had started to erupt. Currently, the national park where the volcano is located remains closed, and the crater continues to emit smoke, which is very spectacular.
