作为土生土长的广州人,广州酒家还真是我懂事以来听过和吃过的第一家,比起现在更多的精致粤菜后起之秀,几十年来它更多的是对粤菜的坚持。在越华路珠江国际大厦的这间广州酒家,邻近北京路商圈,比其他分店走高档路线,位于5楼的酒家大堂,桌椅摆放空间大,茶客们聊天不会比邻座干扰,挺舒服。晚饭时段过来,点心已经不能满足肚饿的吃货,赶紧在白切鸡和豉油鸡之间,选择了味道更浓的豉油鸡,还有鱼肚腐竹锅,炸雪糕鱼(九肚鱼),还有点心类的鳗鱼福袋。菜式虽然还是比较普通家常,但是这间独有天极品招牌的广州酒家,再普通的菜式都令人期待。豉油鸡,在广州出名的粤菜馆,鸡简直是不容有失的菜,做得不好,基本招牌就无了。这道豉油鸡酱汁浓厚,鸡皮上色很漂亮,带着油光闪闪的光泽,鸡皮下只有薄薄一层的黄油脂肪,好鸡。鸡肉吸收了厨师特調的豉油汁,非常香浓滑嫩,鸡汁用来捞白饭,不怕胖的话简直是极品。鱼肚腐竹竹笙锅,材料很丰富,鱼肚的数量很多,上汤汤底鲜甜,里面都是吸收了汤汁的材料,丝瓜尤其好吃。经理推荐的雪糕鱼,就是我平时狠喜欢的九肚鱼,九肚鱼之所以好吃,因为肉质像滑豆腐,和其他鱼类都不同,而且只有小软骨,一条吃下去,不怕鱼骨卡喉咙。酥炸的外皮狠酥脆,鱼肉很好的封在酥皮内,肉汁丰富而嫩滑,好吃得停不下来。最后的鳗鱼福袋,比较有趣,整个点心弄得很有心思的一个小钱袋造型,里面放了带汁水的鳗鱼,一口咬下去,冷不防大量的鳗鱼汁一涌而出,赶紧用嘴全部接着不浪费,再次品尝到外酥内嫩的口感。这间天极品的价格比其他广酒分店略贵,菜式最低50起,三个人四个菜,人均100不到。但是出品符合价格标准,听说点心也很好,下次要试试。
