As the night market by the sea lit up with its string lights, the aroma of grilled oysters, mingled with the salty sea breeze, filled the air. As the vendor pried open the shells with a knife, juices dripped down the sides. He topped them with minced garlic and chili flakes, then placed them on the charcoal fire, the sizzling sound and fragrant aroma filling the air. Someone sprinkled on some chopped scallions; the green bits trembled in the steam, seemingly breathing. Nearby, a large pot simmered with spicy crayfish, the bright red broth bubbling with Sichuan peppercorns. When scooped out, the crayfish's tails curled into a cute shape; peeled open, the tender white meat was springy and refreshing, making lips numb with spiciness, yet one couldn't stop eating. A queue formed in front of the stall selling "qingbuliang" (a type of herbal dessert), the sweet aroma of coconut milk mixed with the scents of red beans and barley. A few ice cubes were added and stirred, the cool sensation perfectly balancing the heat of the seafood. These foods, displayed on the folding table, lack elaborate plating but possess the most vibrant flavors. The alternation of salty, spicy, and sweet savory notes creates a vivid taste memory. Even the sea breeze carries an enticing aroma. It turns out the best meals aren't necessarily in upscale restaurants; the lively atmosphere of street food is the most captivating feast, taking your taste buds on a journey.
